By iwannabachef This book is amazing in that it takes a seemingly mundane activity, serving guests in a hospitality atmosphere, and makes it interesting. It breaks down every movement, why it's done, and how it should be done. I never new there was so much to know about setting a table, taking an order, or presenting wine at a table. If you're interested in becoming involved with the preparation and delivery of food in the hospitality industry, read this book.
